Equinox

Last night was really fantastic! We went up to the 69 floors of the Equinox complex restaurant. After it, we moved to Long Bar at Raffles Hotel, drink Singapore Sling! The scenery above is fantastic, especially because of its intricate city planning. After visiting here, it is again proved that Taipei 101 has the only advantage of its height but nothing else. The architecs and urban planners of Taiwan should really learn from how Singapore has made all this from a small colony 50 years ago.

The waiters in Equinox is very well-trained in serving. (Surely it has to do so, for its expensive price range.) They will check if they can serve the next course first, and introduce every course before everyone started eating. The best part was the appetizer. It was a very very big foie gras. No matter how people criticize eating foie gras either for health issue or for animal rights issue, I still cannot resist the taste at all. The one we had was the entire piece (foie gras entier), not the sliced part (though its origin unknown). It was slightly fired, only for a very short period of time. The surface is cooked and crispy, but inside is still very fresh and soft. The foie gras was served with a piece of honey cake & sugared orange peel to make it less greasy. But I will suggest not to eat foie gras with bread from the beginning, or the great taste of foie gras will never be discovered!
The last time I had was the sliced foie gras, also appetizer, served with artichoke and other ingredients. That was also so unforgettable! The feeling of the foie gras melting between tongue and the space inside your mouth really brings me to heaven! I would like to write about Singapore Sling another day.
Anyway, I did really have a very wonderful night. Wish this will become my life some day.

Singapore is great!
